Cheeses of the Month

We have gone all patriotic this April to honour St George with three very fine English Cheeses.

VINTAGE LINCOLNSHIRE POACHER

Made by Simon Jones, this strong firm cheddar like cheese has won many awards. It is susceptible to seasonal variations, in summer, they tend to get fruity, rich sweet flavours whereas in winter, the flavour tends to be more savoury, sometimes almost meaty. This cheese has been taste selected and matured on for 18 to 22 months. It has more depth and complexity with a lovely smooth lingering aftertaste, often with a hint of sweetness.

SUSSEX SLIPCOTE

A traditional sheep's milk cheese with a light, very soft texture and a sweet, refreshing citrus taste. It was originally called slipcote because the cheese curds used to mature too fast and the cheese would slip out of the cloth (or 'coat') it was in. Sussex Slipcote is made by hand near Duddleswell in East Sussex.

GREENS OF GLASTONBURY GOATS CHEDDAR

Made using the same traditional methods utilised by all West Country Farmhouse Cheddar makers, but using the distinctive milk from a herd of local goats. Matured for more than 6 months, the resultant cheese has a uniquely creamy and nutty flavour with a long, mature finish.
